What I Learnt Today

If you make "meringues" using whisked egg white and sugar, then what does whisking egg yolks with sugar give you? You get "blanchir", which originates from the French word for "to whiten" or "to bleach", which is essentially a whitening of the thick yellow yolk into a paler yellow paste. You end up with a really good custard like-filling for pastries.
